Vineyard: Kuitpo & Macclesfield, Southern Adelaide Hills

Soil type: Sandys loam on clay

Picking date: February 27 and March 9, 2021

Picking method: Machine harvested with on board destemmer

Processing: Pinot Noir: Destemmed retaining 50% whole berries with no whole bunch. Pinot Gris: Destemmed, cold soaked on skins for 2 days before pressing to foudre for ferment

Fermentation: Pinot Noir: Natural ferment in open top steel fermenters, hand plunged twice daily, on skins for 1 week. Pinot Gris: Natural ferment in 2000L foudre for 3 weeks

Time on skins: Pinot Noir: 7 days. Pinot Gris: 2 days 

Pressing: Free run and pressings combined

Settling / blending: Settled off gross lees for 7 days for blending 

Aging vessel: 2500L stainless steel bank for 3 months

Filtration: Sterile

Fining: No

Alc: 12%

pH: 3.57

TA: 5.7

SO2: 24 free / 47 total
