Processing: 2/3 destemmed, 1/3 whole bunch (100%)

Fermentation: Destemmed component - open ferment for 2 weeks, hand plunged twice daily. Whole bunch component – carbonic for 6 weeks

Pressing: Free run and pressings combined

Settling: Settled off gross lees for 7 days

Aging vessel: French oak Barrique (10% new) for 12 months, then racked to stainless for 3 months
